-Isengard would be rebuilt and the Mouth of Sauron would live there.

Sauron's plan was to attack after all this had happened from a far stronger position, and conquer everything.

I'm pretty sure it was 120 and 105; Legolas saw one hundred and five riders, included Éomer (I guess) who later said that he had lost fifteen men and twelve horses. So, 120 Riders originally and 105 survivors is my answer.
